Red Velvet Cupcakes with Cream Cheese Frosting

I think your Valentine would LOVE to receive these this year !!!
Red Velevet was a signature dessert at the Waldorf-Astoria Hotel in the 1920's.  Foods were rationed during wartime so people used boiled beets to enhance the color of their baked goods and retain moisture.  No beets in these though!    These are so good - moist with a hint of cocoa.   YUMMY
